The Olive Grove

The olive grove occupies 190 hectares of land on stoney clay-sand soils and according to the variety and the soil the plantations used are either traditional or for superintensive cultivation.

The north-south positioning favours even sunshine at midday and contributes to correct pollination brought about by the dominant winds.

Varieties

Our constant search for quality and differentiation leads us to select varieties of olives that best suit our farm in order to obtain oils that represent the nature and uniqueness of our microclimate and geographic location and that represent the different culinary and gastronomical needs.

Arbequina:

Originally from the town of Arbeca it is well adapted to poor, dry soils. It is quickly processed and of a constant and high yield. Ideal for intensive plantations. It is of medium and staggered ripening and produces fruity, sweet and balanced oils of an excellent quality.

Hojiblanca:

A productive variety with alternating high and low yield years. It receives its name from the colour of the underside of its leaf which is a light silvery colour. Not resistent to frost and drought. The olive ripens late producing good quality oil with a low fat content. Its main characteristic is that it produces a fruity, green and very stable oil.

Blanqueta:

Originally from the town Muro de Alcoy in Alicante, it stands out for its high productivity and consistency. Its ripening period is early but the fruit ripening is slow and staggered. The oil is fruity and bitter which makes it particularly useful at fortifying other flatter oils.

Cornicabra:

Originally from the town Mora in Toledo, it is a rustic variety adapted to empty, dry soils and very resistent to frost. The ripening period is late although there is marked alternation of high and low yield years. The oil produced from this variety has excellent organoleptic properties, is highly stable and has a high fat content.

Irrigation

The farm has its own wells which makes extra irrigation possible during the most crucial stages of production. This absolute control over the inßuence of irrigation on the quality of the oil allows us to optimize the yield and work plot by plot, thus producing oils according to the costumer«s taste.

This controlled irrigation which is lacking on some plots, allows us to obtain higher polyphenol levels (natural antioxidants) than most of the extra virgin olive oils on the market.
